Sanity Saving Easy Baked Garlic Lemon Chicken Thighs Recipe

Ingredients 

Here’s what you’ll need to make this flavorful dish: 

  • 6 bone-in, skin-on chicken thighs 
  • 4 garlic cloves, minced 
  • Juice of 2 lemons (about 1/4 cup) 
  • 3 tablespoons olive oil 
  • Italian Seasoning
  • Salt & Pepper

Instructions 

  1. Preheat your oven. 

Start by preheating your oven to 425°F.  This will ensure an even cook for the chicken thighs. 

  1. Prepare the chicken. 

Pat the chicken thighs dry with paper towels to ensure the skin becomes crispy. Season both sides generously with salt, pepper, and Italian seasoning. 

  1. Make the garlic lemon mixture. 

In a small bowl, whisk together the minced garlic, lemon juice, and olive oil. This will form the flavorful marinade that coats the chicken. 

  1. Sear the chicken. 

Heat a large oven-safe skillet over medium heat. Place the chicken thighs skin-side down in the skillet and sear for 5 minutes, or until the skin is golden brown and crispy. Flip the chicken and cook for an additional 2–3 minutes on the other side. 

  1. Add the garlic lemon mixture. 

  Pour the garlic lemon mixture over the chicken in the skillet, ensuring all thighs are coated evenly. 

  1. Roast the chicken. 

Transfer the skillet to the preheated oven and roast the chicken for 25 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the pan juices halfway through cooking for extra flavor. 

  1. Serve and enjoy.
