To make this Crockpot Beef Vegetable Soup you need is ground beef, a potato, frozen mixed vegetables, beef bouillon, water, diced tomatoes, salt and pepper. Start by forming the ground beef into 1/2 in meatballs.

Wash the potato and cut it into 1/2 in chunks. Add the ingredients to the slow cooker, and give a quick stir. Cook on high for 3.5 hours, or low for 6-8 hours.

Ingredients

  • 1 pound ground beef
  • 1 large potato

  • 6 cubes beef bouillon
  • 6 cups water
  • 1 can diced tomatoes

  • 1/2 teaspoon pepper

Instructions

  • Form the ground beef into ½ inch meatballs.
  • Wash the potato, and cut the potato into ½ inch chunks.
  • Add the ingredients to the slow cooker, and give a quick stir.

Notes

You can choose to use beef broth, rather than bouillon and water.
