To make this Crockpot Beef Vegetable Soup you need is ground beef, a potato, frozen mixed vegetables, beef bouillon, water, diced tomatoes, salt and pepper. Start by forming the ground beef into 1/2 in meatballs.


Wash the potato and cut it into 1/2 in chunks. Add the ingredients to the slow cooker, and give a quick stir. Cook on high for 3.5 hours, or low for 6-8 hours.

Servings: 4 servings
Ingredients
- 1 pound ground beef
- 1 large potato
- 1 package frozen mixed vegetables
- 6 cubes beef bouillon
- 6 cups water
- 1 can diced tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Form the ground beef into ½ inch meatballs.
- Wash the potato, and cut the potato into ½ inch chunks.
- Add the ingredients to the slow cooker, and give a quick stir.
- Cook on high for 3.5 hours, or low for 6-8 hours.
- Stir and serve. Enjoy!

You can choose to use beef broth, rather than bouillon and water.
