All you need to make this Crockpot Beef Macaroni Soup is ground beef, frozen mixed vegetables, diced tomatoes, beef broth, elbow macaroni, salt and pepper. Start by browning the ground beef in a skillet on the stovetop.


Add cooked ground beef, mixed veggies, diced tomatoes, broth, salt, and pepper to a crockpot. Cook on high for 4 hours, or low for 7-8 hours. Add the noodles 30 minutes before serving to allow them to cook.

Ingredients
- 1 pound ground beef
- 12 ounces frozen mixed vegetables
- 14 ounces diced tomatoes
- 32 ounces beef broth
- salt and pepper to taste
- 1 cup elbow macaroni
Instructions
- Add the ground beef to a medium pan, and brown over medium heat. Drain grease.
- Add cooked ground beef, mixed veggies, diced tomatoes, broth, salt, and pepper to a crockpot.
- Cook on high for 4 hours, or low for 7-8 hours.
- Add the noodles 30 minutes before serving to allow them to cook.
Notes
You could make this soup recipe on the stovetop as well. Cooking time after adding everything together would be about 30 minutes on medium.
You may also cook the noodles separately and add them right before serving, so that they do not absorb any of the broth.
