How to Make Cinnamon Chip Banana Bread

To make Cinnamon Chip Banana Bread you will need overripe bananas, flour, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, eggs, butter, vanilla extract and cinnamon chips. If you can’t find cinnamon chips at your local grocery store you can order them on Amazon, or substitute them for chocolates. You can even leave them out altogether and just add an extra 1/2 teaspoon of cinnamon for more flavor.

Preheat the oven to 350 degrees. Grease a loaf baking pan with cooking spray or butter. Set aside. In a large mixing bowl, mash bananas. Add in eggs, butter and vanilla extract. 

Mix in flour, baking powder, baking soda, salt, cinnamon and sugars until just incorporated. Add cinnamon chips. Pour the batter into the loaf pan. Bake in the oven at 350 for 60 minutes or until a knife comes out clean.

Ingredients

  • 2 cups floue
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 overripe bananas
  • 2 eggs
  • 1/2 cup butter melted
  • 1 tsp vanilla extract
  • 1 cup cinnamon chips

Instructions

  • Preheat the oven to 350 degrees. Grease a loaf baking pan with cooking spray or butter. Set aside. 
  • In a large mixing bowl, mash bananas. Add in eggs, butter and vanilla extract. 
  • Mix in flour, baking powder, baking soda, salt, cinnamon and sugars until just incorporated. Add cinnamon chips. 
  • Pour the batter into the loaf pan. Bake in the oven at 350 for 30 minutes or until a knife comes out clean. 

Notes

  • Keep at room temperature for 4 days or refrigerate for up to 5 days. You can also freeze it for up to 6 months. 
  • The more overripe the bananas, the better the recipe. 
  • You can also use frozen bananas, just thaw to room temperature before beginning the recipe.
  • Avoid using underripe bananas, they will be difficult to mash and the bread will not be moist or sweet enough.
  • This recipe uses a 8- x 4-inch loaf pan
  • Add-ins: walnuts or pecans go great with the cinnamon chips if you prefer nuts in banana bread.
