Crockpot Chicken Gnocchi Soup
Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 1/2 cups shredded carrots
- 1 tablespoons minced garlic
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 6 cups chicken broth
- 16 ounces gnocchi
- 1/4 cup flour
- 1 cup heavy whipping cream
- 1 1/2 cups fresh spinach, chopped
Instructions
- Peel and shred carrots, then rinse and chop celery.
- Add chicken, carrots, and celery to the bottom of a crockpot.
- Pour the seasonings on top of the chicken, then add the chicken broth.
- Cook on high for 3 hours.
- Remove the chicken from the crockpot, and shred it. Return chicken to crockpot.
- Add the gnocchi, flour, and heavy cream to the crockpot. Cook for an additional 20 minutes.
- Add the spinach, cook for 5 minutes, then serve.
