How to Make Chicken Gnocchi Soup

Chicken breasts, carrots, salt, pepper, garlic, chicken broth, gnocchi, flour, heavy whipping cream and fresh spinach are all the ingredients you need to make this soup. Peel and shred some carrots, chop up some celery, add the chicken and vegetables to a crockpot.

Then pour in the seasonings and chicken broth. Cook on high for 3 hours, remove the chicken from the pot and shred it, then add the gnocchi, flour, and heavy cream.

Let everything cook together for another 20 minutes, then add spinach leaves and serve.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 1/2 cups shredded carrots
  • 1 tablespoons minced garlic
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 6 cups chicken broth
  • 16 ounces gnocchi
  • 1/4 cup flour
  • 1 cup heavy whipping cream
  • 1 1/2 cups fresh spinach, chopped

Instructions

  • Peel and shred carrots, then rinse and chop celery.
  • Add chicken, carrots, and celery to the bottom of a crockpot.
  • Pour the seasonings on top of the chicken, then add the chicken broth.
  • Cook on high for 3 hours.
  • Remove the chicken from the crockpot, and shred it. Return chicken to crockpot.
  • Add the gnocchi, flour, and heavy cream to the crockpot. Cook for an additional 20 minutes.
  • Add the spinach, cook for 5 minutes, then serve.

Notes

You can make this on the stovetop too. Just cook and shred chicken beforehand. Add the chicken, carrots, celery, seasonings, and chicken broth to a large pot. Cook on medium until celery is tender. Before serving, cook gnocchi according to package directions, then add gnocchi, heavy cream, and flour. Heat for an additional 20 minutes, then add the spinach, and cook for a few minutes until it wilts.
